JACQUES & LAURENT POURCEL
Born in Montpelier, in the south of France, Jacques and Laurent Pourcel opened their first restaurant, "Le Jardin des Sens" in 1988, at the tender age of 23. In 1998, the restaurant was awarded 3 stars in the Michelin Guide Rouge, achieving instant fame. The Pourcels' cooking, which has been likened to a new wind in the world of French cuisine, aims to establish what will be "the tradition of 100 years from now", interpreting classical dishes in a modern way. Unlike the rich, heavy flavours of traditional French cuisine, the Pourcel brothers' cooking is light and refined, bringing out the acidity, sweetness and perfume of fruit, and stimulating the diner's senses to the maximum. |

KOTARO HASEGAWA
Kotaro Hasegawa found his vocation as a chef at the age of 16. At the age of 26, he travelled to France to continue his studies, gaining experience at a number of star-rated restaurants, including the 3-star "Le Jardin des Sens" in Montpelier. He returned to Japan in 2004, the year in which "Sens et Saveurs" opened, and in the following year became its head chef. In 2006, he won the Japan heat of the "Bocuse d'Or", the world's most prestigious French cuisine contest and traveled to Lyon, in France, to take part in the final, and was placed 6th overall, the best result ever achieved by a Japanese contestant. He is one of the leading exponents of French cuisine among the younger generation of Japanese chefs. |
